I have a major sweet tooth – mostly chocolate. So do my kids. It’s a problem because I try to keep anything super sugary out of the house – for their sake and for the sake of my waistline. It’s raining up in Makawao today and we needed a fun snack that the kids could help with. I came up with this version of “fudge” – it is not smooth like traditional fudge – it does have a texture, but it melts in your mouth and has lots of good fats in it!
What you’ll need:
A big mixing bowl
Wet ingredients – 1/2 C raw honey, 1/2 C coconut oil, 2 Tbsp. Kerrygold butter
Dry ingredients – almond meal, nuts and seeds of choice, chocolate chips, coconut (make sure it’s unsweetened), nut butter of choice (I used almond butter), ground flax seed (if you are just looking for gluten free, you can also add gf rolled oats!), dash of celtic or himalayan sea salt if your butter is unsalted
Method: If your coconut oil and butter are hard, melt in a pot first!
Add all your dry ingredients into the mixing bowl (kids love this part), then stir in the wet ingredients. I eyeballed my dry ingredients according to the amounts of the wet ingredients. You want to end up with a stiff cookie dough type texture.
Place into a casserole dish and refrigerate. It will harden into a fudgey texture. Cut into pieces and enjoy!
For my fudge, I kept it pretty smooth by blending my chia seeds, pecans, and coconut flakes into a fine milled powder. You can make this as smooth or as crunchy as you’d like!
